'Because Eating Healthy Doesn't Have To Suck.......'

I think that pretty much explains it. There is this notion that eating healthy is foraging for twigs and berries in your back yard but on the contrary, it actually means eating balanced meals and eating in moderation. (by the way, this also means don't fear the bread in this recipe) I wanted to share this classic meal--and no, it's not made with ManWich.
This also opens up the opportunity to make an extra batch, store it in the fridge and when you need a quick meal, you can add a scoop or two onto a salad or as is with a veggie side.

INGREDIENTS
1 tbsp. extra-virgin olive oil
1 large onion, diced
1 lb. ground turkey
2 cloves garlic, minced
1 tbsp. dried oregano
1 tsp. crushed red pepper flakes
2 c. marinara
4 hoagies or Italian rolls
4 slices provolone
Chopped fresh Italian parsley, chopped
DIRECTIONS
- In a large skillet over medium heat, heat oil. Add onion and cook 5 minutes. Add ground turkey, garlic, dried oregano, and crushed red pepper flakes and cook until golden and no longer pink, 6 to 7 minutes.
- Add sauce and stir until coated. Let simmer until slightly thickened, 8 minutes.
- Heat broiler. Spoon ground turkey mixture onto hoagies and top with provolone. Broil until cheese is melty, 2 to 3 minutes.
- Garnish with Italian parsley and serve.
